Mango Payasam


Ingredients:

Mango skinless 2
sugar 1/2 cup

cardamom 1/2 tsp
milk 1/2 litre

sooji/rava 3 tsp




Method: Boil milk well. Add sugar, rava to make it thicker , even add maida or rice flour in the place of rava. Add cardamom powder and mix well.Switch the gas off.Now, mix the mango pulp paste to the milk and mix well. Cut half of the mango pieces without skin to garnish the payasam.

Carrot Payasam

Ingredients

4 cups Milk
10 teaspoons sugar
2 medium sized Carrots
2 tblsp Coconut grated
4 Cardamoms powdered
Few Cashew nuts and Raisins
1 teaspoon Ghee for frying.

Method:

Bring Milk to Boil.Grind the Carrots into fine paste in a mixie.Add sugar to milk and stir for a while.After sugar is melted add grated coconut, carrot and cardaomom powder, let boil for 5 minutes.Finally, separately fry the cashew nuts and rasins in ghee and add it to the kheer.

Vermicelly Pulav

Ingredients

Semiya - 1 cup
Water or cocount milk- 1 and 1/2 cups
Salt to taste
Mixed vegetables like carrots, peas ,
beans etc as desired- finely chopped and
boiled- Microwave for 4 minutes if using
frozen vegetables
Ginger garlic paste
Slit green chillies
Pulav masala powder
or garam masala powder - 1 tsp
oil
Cashews and chopped
corriander to garnish


Method

Roast the semiya in oil till golden brown and keep aside roast cashews and keep
a side .Heat some oil fry the ginger garlic paste and chopped boiled vegetables.
Add masala powder and chillies.add the water or coconut milk.let it boil.add salt
add the semiya and cook till all liquid evaporates.cool and seperate lumps before serving
garnish with cashews and chopped corriander leaves.

Oats Upma



Ingredients:

2 cup oats
3 - 4 cups water
1/2 medium sized onion,
sliced
2 green chilies,
1/4 inch ginger,
chopped fine

1 cup mixed vegetables
sliced carrots, green beans,
fresh green peas,
sliced potatoes

1 medium sized tomato,
diced

salt to taste

2 table spoons oil
1 tablespoon cashews
1/2 teaspoon each,
mustard seeds,
cumin seeds
5-6 curry leaves
a pinch turmeric powder

Method:

a saucepan, heat oil on medium-high.Add cashews, mustard and cumin seeds.When the mustard seeds stop spluttering, add turmeric, onion, green chilies, and ginger. Saute for a minute.Add mixed vegetables, tomato, salt to taste. Saute for a minute, add water and cook until the vegetables are cooked but crisp to bite.Add oats. Stir well. If using rolled oats, cover and cook for 5 minutes. If using oatmeal, cook for 3 min or until done to your preference.Serve hot or cold.this recipe is good for health.

Tomato dosa



Ingredients:


2 medium size tomatoes finely chopped..
1 cup besan or chick pea flour.
one medium size onion finely chopped
1 tsp jeera
lots of coriander finely chopped
1 tsp red chili powder
½ tsp haldi powder
salt to taste

Method:

In a bowl mix together all the ingredients.make the batter of dosa consistency,pour it on a hot griddle or tava.pour oil on all sides.close the tava and let it cook on one side.flip on to the other side let it cook on the other side.serve hot with coconut chutney
