Ingredients
Beetroot grated 1 cup
Onion 1
Tomato 2
Green chilly 4
Ginger 1/4 inch piece
Garlic 2 cloves
Red chilly powder 1 tsp
Coriander powder 1/2 tsp
Turmeric powder 1/4 tsp
1st coconut milk 1 cup
2nd coconut milk 2 cups
Curry leaves a few
Salt as per taste
Oil as required
Method:
Heat oil in a pan and fry onion, green chilly, ginger, garlic and curry leaves till the onion turns it's color. Then add red chilly powder, coriander powder and turmeric powder and fry for a minute. Add tomato and fry well. Then add grated beetroot and fry for a while. Add 2nd coconut milk and cook well. Then add salt and 1st coconut milk and stir well. Donot boil it. Remove from fire and mix well.
