Sweet Potato Crunch




ingredents:

29 ounces sweet potatoes
1/2 cup sugar
4 tablespoons butter
1 egg
1/2 teaspoon cinnamon
1 dash salt
1 cup ritz crackers
1/2 cup walnuts
4 tablespoons butter
3/4 cup brown sugar

Method
  1. Mash yams and mix them well with the next 5 ingredients.
  2. Place in a 1 1/2 quart casserole dish. Set aside.
  3. Crumble the Ritz crackers and chop the walnuts.
  4. Melt the butter.
  5. Mix the crackers,nuts,melted butter and brown sugar together.
  6. Place over the sweet potato mixture.
  7. Bake at 350 degrees for 30 minutes.

Chocolate Popcorn

ingredients:

12 cups popped popcorn

2 ½cups salted peanuts
1 (11.5 ounce) package milk chocolate morsels
1 cup light corn syrup
¼cup butter or margarine

directions:
  • preheat oven to 300ยบ F. Grease a large roasting pan. Line a large bowl with waxed paper.
  • Combine popcorn and nuts in greased roasting pan.
  • Combine morsels, corn syrup and butter in medium, heavy-duty saucepan.
  • Cook over medium heat, stirring constantly, until mixture boils.
  • Pour over popcorn; toss well to coat.
  • Bake, stirring frequently, for 30 to 40 minutes.
  • Cool slightly in pan; remove to bowl lined with wax paper.
  • Store in airtight container for up to two weeks.
