Sweet Potato Crunch




ingredents:

29 ounces sweet potatoes
1/2 cup sugar
4 tablespoons butter
1 egg
1/2 teaspoon cinnamon
1 dash salt
1 cup ritz crackers
1/2 cup walnuts
4 tablespoons butter
3/4 cup brown sugar

Method
  1. Mash yams and mix them well with the next 5 ingredients.
  2. Place in a 1 1/2 quart casserole dish. Set aside.
  3. Crumble the Ritz crackers and chop the walnuts.
  4. Melt the butter.
  5. Mix the crackers,nuts,melted butter and brown sugar together.
  6. Place over the sweet potato mixture.
  7. Bake at 350 degrees for 30 minutes.
