Vegetable Cutlet


Ingredients

4 medium-sized potatoes,
boiled and mashed

4 carrots, finely chopped and boiled

150 gms French beans,
finely chopped and boiled

150 gms green peas, boiled
1/4 tsp turmeric powder

1/2 tsp dry mango powder (amchur)

3/4 tsp red chilli powder

2 tbsp coriander leaves, chopped

2 tbsp plain flour

150 gms breadcrumbs

Salt, to taste
Oil for frying

Method

In a bowl, mash potatoes and peas, mixing them with the vegetables. Add salt, corainder leaves and chilli, turmeric and amchur powders. Mix well. Shape into flat-oval patties. Roll on breadcrumbs and shallow-fry in hot oil till golden brown. Serve hot.
