Karela (bitter gourd) Kababs


1. Karela (Bitter gourd) : 3
2. Salt to taste
3. Sesame seeds    : 2 tea spoons
4. Minced onion    : 2
5. Minced green chilli : 1 table spoon
6. Grated ginger : 1 table spoon
7. Boiled and mashed potato (medium) : 1
8. Chilli flakes : 1 tea spoon
9. Garam masala powder : 1 tea spoon
10. Jaggery : 1 tea spoon
11. Oil for deep frying
12. Basin flour : 1 cup


Wash bitter gourds cut on either side and remove seeds. Wash and apply salt all around and keep aside.  Heat one table spoon of oil and fry sesame seeds till splutter. Add ingredients one by one four to six and fry.  Add potato, chilli flakes, salt, garam masala and jaggery. Mix and stuff in to the karela. Mix basin flour with enough water and make a thick paste. Heat oil in a deep pan and dip karela slices one by one into batter and deep fry till golden brown. Serve hot with Thai sweet chilli sauce.
