Chicken Biryani



Ingredients for Chicken:

Chicken 3 lbs.
Onion 300 gms.
Ginger 2"
Garlic 4 pieces
Green Chilli 2-4 according to taste
Tomato 1 medium size
Vinegar 1 tbsp.
Curd 3 tbsp.
Turmeric Powder 1 1/2 tsp.
Dhania powder 1/4 tsp.
Chilli powder 1/2 tsp.
Oil 2 tbsp.
Garam Masala 1/2 tsp.
Biryani Masala (optional) 1/2 tsp.
Salt

Ingredients for Rice:

Basamati Rice 3 cups
Sandwitch Cheese 3 slices
Kewra water 3-4 drops
Cinnamon 2"
Cardamom (big or small) 6 pieces
Cloves 8 pieces
Saffron 1 pinch
Salt 1/2 tsp.
Butter 50 gm.

Method :

  1. Cut the chicken into 1 1/2" pieces, wash and drain.
  2. Cut onion, ginger, garlic, green chilli, tomato in small pieces and blend to a paste.
  3. Marinate the chicken with curd, vinegar, turmeric powder, dhania powder, chilli powder and the above paste for an hour or more.
  4. Take the rice in the rice cooker, add 6 cups of water and every ingredient for rice (mentioned above) except butter and set it to cook.
  5. Now heat a heavy bottomed pan, pour the oil and then the marinated chicken and cook till the chicken is soft, add salt, cover with a lid and cook till it is tender. Do not add any water and there should not be any gravy left.
  6. Add the garam masala and the biryani masala. Now the rice must be ready.
  7. Take another heavy bottomed pan, heat it, add the butter and make the oven off.
  8. Add the cooked rice in butter and mix slowly and carefully so that the rice grains don't break.
  9. Take the serving tray, pour a layer of rice, add a layer of chicken and then another layer of rice and then chicken.
  10. Lastly sprinkle some rice over the chicken and cover the serving tray.
