Apple Butterscotch Cake Recipe
Ingredients
1/2 tsp baking soda .
1 c all-purpose flour (I use unbleached) .
3/4 c whole wheat flour .
2 large golden delicious apples, coarsely grated (about 2 c, packed, I used 3 medium apples & peeled them first) .
1/2 c unsweetened applesauce .
1 tsp baking powder .
1/2 c canola oil .
3/4 c sugar .
1/2 tsp salt .
3 large eggs, beaten .
1 tsp pumpkin pie spice or cinnamon .
1/4 c ground flaxseed or wheat germ .
1/3 c butterscotch chips
Directions
Whisk together flours, sugar, baking soda, baking powder, flaxseed, pumpkin pie spice, & salt In a large-ish bowl.
Whisk together eggs, applesauce, & oil in another bowl.
Stir in apples until well-mixed.
Pour liquid ingredients over dry ingredients & stir just until moistened.
Stir in butterscotch chips.
Pour batter into a 13x9 pan that has been coated with cooking spray.
Smooth with a rubber spatula.
Bake in a preheated 350 degree oven about 35 mins, or until the top is golden & a toothpick inserted in the middle comes out clean.
(Watch carefully, mine was done at 26 mins).
Cool on a wire rack before cutting.
