Soyabean Dosa


Ingredients

Soyabean-soaked in water for 8 hours, followed by sprouting which increases their vitamin E content. Ginger
Salt
Chillies

Rice Flour-1-2 tsp,
to increase the spreadability, optional.

Method
Grind the soyabeans in a grinder, with ginger, salt and chillies to taste. Add water till the consistency is of idli-atta. Heat the coated pan. Pour soyamixture on the hot pan, about 2 large spoonful. Spread with a spoon. Cover. Cook for 2 min, on medium heat. Invert and cook other side, without cover. Your soyadosa is ready!

Additions: Adding Onions, Tomatoes, Grated Carrots, Grated Raddish, Cumin seeds make the dosa more delicious. Oil can be sprayed on pan while cooking, but is not a must.

Soya Bean Kadhi



Ingredients


Soya Beans - 1/2 cup,
Cooking Oil - 1 tblsp,
Mustard Seeds - 1 tsp,
Cumin Seeds (Jeera ) - 1/4 tsp,
Green chilliess - 2,
Cilantro (coriander leaves) - 4 to 5 sprigs,
Red Chillies - 2 (or as per your requirement),
Grated ginger - 1 tsp,
Asafoetida or Hing - 1 pinch,
Turmeric (Haldi) - 1/2 tsp,
Lemon juice - 2-4 tsp,
Salt to taste.

Method:

Soak Soya Beans Overnight. Pressure Cook Soyabeans with some salt until tender. When cool, blend the beans with green chillies in a mixie until smooth. In a kadai, heat oil, add mustard and jeera. When the mustard splutters, add haldi, ginger, broken pieces of red chillies and hing and fry over medium heat. Add the blended mixture of the beans into the kadai and cook for 2 mins. Add Lemon juice, salt and Chopped Coriander Leaves and enjoy. Can be served with plain rice Or chappatis.

Soya Wonder


Ingredients

Soya Nuggets - 1 cup

Onion sliced - 1 cup
Ginger/Green Chilli paste - 2 tsp
Garlic chopped fine-1 tsp

Sanuf (fennel seeds)-1/2 tsp
Dhaniya powder-1 tsp
Garam Masala powder-1 tsp
Kashmiri Chilli powder-1 tsp
Salt to taste

Oil-2 tbsp

Method:

Boil 3 cups water and put in the soya nuggets in it boil for 2 mins and off the gas. Keep covered for 10 mins. Drain off the water and sqeeze excess water well. The nuggets are ready to be cooked. Heat 1 tbsp oil. Fry the sliced onion. Add the ginger/chilli paste, dhaniya powder, chilli powder and fry well. Cool and grind to paste with one tomato. Heat oil. Add the fennel seeds, chopped garlic and fry. Add the ground paste and fry again. Add the garam masala and mix. Add the soya nuggets and stir again. Add salt and mix. Add 1 1/2 cup water and simmer till gravy thickens. Sprinkle coriander leaves and serve hot.
