Coconut Ice Cream


Ingredients:

Granulated Sugar - 2/3cup
Water- 1
1/4cup
Coconut Milk - 800ml
Double (heavy) Cream - 11/4cup
Desiccated Coconut - 2tbs

Method:

Heat sugar and water in a saucepan stirring occasionally until the sugar dissolves. Boil for 10 minutes without stirring. Remove it from the heat and allow to cool slightly. Mix the cooled syrup with the coconut milk and pour into a container. Cover and freeze for about 3 hours or until semi-frozen around the edges and mushy in the centre.Transfer the mixture to a bowl and cut up with a knife. Then place half the quantity at a time in a food processor and process until smooth, or whisk thoroughly by hand. Turn the mixture into a bowl. Whip the cream until soft peaks form and fold into the ice-cream, then stir in the desiccated coconut. Return the mixture to the container and freeze again until solid.

Mint Pakoda

Ingredients :

Besan Flour - 1cup.
Rice Powder - 1cup.
Ghee - 2tbs.
Soda powder - 2pinch.
Finely chopped mint leaves.
and coriander leaves - 2cups.
Cashew nuts - 12nos.
Ground ginger and green chilly - 1tsp.
Chilly powder - 1/2tsp.
Cumin seeds - 1/4tsp.
Salt to taste.
Oil to fry.

Method :

Sift besan flour and rice powder and mix it. Add salt and chilly powder to it. Rub ghee finely with the soda powder. Add it to the besan-rice mixture. Cut the cashew nuts into 3 or 4 pieces. Mix all the ingredients together with some water except the oil. Make it a thick batter.
Heat oil in a pan. Pour spoon fulls of prepared batter into the oil and fry until golden brown.

Pineapple Jam


Ingredients :

Pineapple pieces - 6cups
Sugar - 6cups
Citric Acid - 1tsp
Lemon Yellow Colour- 2 drops
Pineapple essence - 2drops

Method

Cook the pineapple pieces with water in a low flame. Stir it continuously with a wooden ladle. While it boils slowly add sugar into it. Boil it well by stirring continuously. To test whether the jam is done, pour some jam on a dry plate. Allow it to cool and tilt the plate. If the jam is ready, it will fall in flakes. When the jam is done, add citric acid, lemon yellow colour and pineapple essence to it. Remove from fire and pour into a bottle. When the jam cools, close the mouth of the bottle.

Apple Jam



Ingredients:


1 kg cooking Apples
750 grams Sugar
2 cups Water
2 teaspoons Lemon juice
or 1/2 teaspoon Citric acid


Method:

Peel, core and cut the apples into slices, cook in water until tender.Add sugar and lemon juice or citric acid and stir on a hot fire until jam sets when tested.Cool a little and pour into sterilised jars and cork tightly.Serve after one day.

Masala Bhath


Ingredients:

Rice-2 cups
Brinjals-100 gms
Oil-1/4 cup
Cumin seeds-1/2 tsp
Turmeric powder-1/4 tsp
Coriander seeds-1 tsp
Grated coconut-1/2 cup
Red chillies-2
Cashewnuts-5
Yogurt/curd-1/2 cup
Cloves-2
Cinnamon-1" piece
Mustard seeds-1/2 tsp
Bay leaf-2
Curry leaves-few
Coriander leaves-few sprigs
Salt-To taste

Method:

Cut the brinjal into small cubes and keep aside.
Roast coriander seeds, cumin seeds and red chillies.Grind to a powder and keep aside.
Heat oil in a fry pan and add mustard seeds.
When they splutter, add cinnamon,cloves, bay leaves and fry well.Add rice and fry for few minutes.
Add brinjals and fry for a few minutes.Add 2 1/2 cups of water,
powdered ingredients and salt and mix well.Cook till the rice is almost cooked.
Remove the rice and pour into a heavy bottomed vessel.Allow to simmer on a low fire for a few minutes.
Garnish with grated coconut and chopped coriander leaves.



Soda Bread

INGREDIENTS

3 cups all-purpose flour

1 tablespoon baking powder.

1/3 cup white sugar.1 teaspoon salt.

1 teaspoon baking soda.

1 egg, lightly beaten.

2 cups buttermilk.

1/4 cup butter, melted.

Method:

Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5 inch loaf pan.Combine flour, baking powder, sugar, salt and baking soda. Blend egg and buttermilk together, and add all at once to the flour mixture. Mix just until moistened. Stir in butter. Pour into prepared pan.Bake for 65 to 70 minutes, or until a toothpick inserted in the bread comes out clean. Cool on a wire rack. Wrap in foil for several hours, or overnight, for best flavor.

Battura


Ingredients :


Maida - 1000gms or 1 kg
Egg - 1
Yeast - 1 tsp
Milk - 1/2 glass
Sugar - 2 tbs
Salt - to taste

Method:

Add the above ingredients together. Add some warm water and mix it into a thick dough. Cover the dough with a wet cotton cloth and keep it aside for six hours. One or two mixing in between will make the dough extra soft. Now the dough is ready. Make small balls with the dough and roll it into thick rounds. Then deep fry it in oil.
To make the dough ready in half an hour, mix the flour with soda (bottled soda), a little sugar and salt.
