Vegetable Pulao

Ingredients:

3 cups of rice, boiled A bunch of coriander leaves. 3-4 green chillies. 2 tsp of coconut, shredded 3 medium onions,sliced fine. 1/2 an onion, chopped. A few sticks of cinammon, a few cardommom seeds, a few cloves. 1 1/2 tsp red chilli powder. salt to taste. 2 flakes garlic. 1 inch piece ginger. Ghee or melted butter for frying. 1 cup of cauliflower flowerets. Some mixed frozen vegetables like beans, carrots and green peas. 3 tsbp ghee(clarified butter)

Method

Grind together the 1/2 onion, coconut, garlic, ginger and coriander in the blender, to make a smooth paste. Keep aside. Fry the onions in a the ghee or melted butter. Also add the cloves, cinnamon and cardommom. When onions are browned properly, add the red chilli powder and fry for 30-45 seconds. Now add all the vegetables,including the cauliflower and sprinkle some water on it. Keep covered and cook on a low flame till the vegetables are cooked. This might take approximately 15-20 minutes. Keep sprinkling water periodically to speeden up the process, but do not add excess water as it will ruin the pulao. When the vegetables are done, transfer the vegeables to a big mixing dish, add all the boiled rice, salt to taste and the blended masala. Mix thoroughly and then heat it either in a microwave or on low heat on the cooking range.It is heated again to let the salt spread across the dish. Serve with Raita.

Stir fried Chilli Paneer



Ingredients

Paneer (indian cottage cheese) - ½
slab
Onion - ½
sliced
Garlic - 4 pods chopped finely
Ginger - 1 inch piece
julienned
Red and Green Chilli - 4
Green bell pepper - ½ sliced Corn Starch - 2 tbsp Ground Black Pepper - ¼ tsp Soya Sauce - 2 tsp Salt Sugar - a pinch Oil for shallow frying - 2-3 tbsp Chopped Spring Onions for garnishing
Method
  • Cut Paneer into rectangles.
  • Prepare a light cornstarch mixture by adding water and a pinch of salt.
  • Drench the paneer rectangles in the cornstarch mixture and shallow fry them in a pan until golden brown. Set aside.
  • Add a tsp of oil to a hot wok, and throw in the onions, ginger, garlic and red and green chillies.
  • Add salt and soya sauce.
  • Once the veges start sizzling, add the green bell pepper and cook for half a min
  • Add a tsp of the remaining cornstarch and a pinch of sugar
  • Add the fried paneer cubes and let it sit for half a min more.
  • Garnish with chopped spring onions and serve hot.

Aloo Chat


Ingredients:

American Sweet Corn Kernels- 200 gms
Boiled Potato - 1(Optional)
Onions - 1 medium
Tomato - 1 medium
Chopped Coriander - 2 tbsp
Chaat Masala - 1 tsp.
Red Chilli Powder - 1 tsp.
Salt to taste
Sev - 3 tbsp.
Oil - 1 tsp.
Lemon Juice- 1/2 tbsp.

Method:

Heat pan on gas. Add a tspful of oil.
2. Add sweet corn kernels and saute well for 5 minutes stirring continuously. Keep aside once done.
3. Chop onion and tomatoes.
4. Dice boiled potato in cubes.
5. In a bowl mix together corn kernels, chopped onion, tomato and potato.
6. Add red chilli powder, chaat masala and salt to taste.
7. Add lemon juice in this mixture and mix all the ingredients well.
8. Serve in bowls and garnish with chopped coriander and sev.

Fruit Chaat


Ingredients:

1 teaspoon cumin seeds, roasted
1/2 teaspoon
red chilli powder

2 tablespoons
green coriander
1/2 cup grapes

METHOD:
  1. Mix all the ingredients.
  2. serve cold.
