Mirapakaya Bajji


Ingredients:

Besan flour- 1 cup
Rice flour - 1/4 cup
Baking powder - 1/4 tsp
Salt to taste
Medium or big size Chili- 10 numbers


For stuffing:

Peanuts - 1/4 cup
Sesame seeds - 1tbsp
Tamarind - 1 tbsp
Coriander leaves
Salt to taste

Fish fry in banana leaf

Method:

Take a green chilli make a slit in the side of each chilli and remove seeds inside the chilli for stuffing.

For stuffing, grind the following ingredients (peanuts, sesame seeds, tamarind, salt, coriander leaves) into a fine paste using very little water. The paste should be in thick paste.

To make batter, mix besan flour, rice flour, baking soda, salt using 1 cup of water .The batter should be in medium/dosa consistency.

Now stuff the green chilli with the paste one by one and keep it aside on the plate.

Dip one by one-green chilli in the batter; drop them gently into hot oil, deep fry until golden brown in color. Take out from the oil and drain well on absorbent paper towels.

Rajma Pilaf

Ingredients:
Red kidney beans 3/4cup
Basmati rice cooked 2 cups
Cumin seeds 1/2 tsp
Cinnamon 1 small stick
Onions 1 medium sliced thinly
Ginger finely chopped 1 tbsp
Green chillies 2 sliced thinly
Turmeric powder 1/4 tsp
Coriander powder 1tbsp
Amchur (dry mango powder) 1tbsp
Oil 1 tbsp
Salt to taste
Cilantro chopped finely 2 tbsp for garnish
Method:
Soak rajma beans overnight. In a pressure cooker heat oil, add cumin seeds and cinnamon stick. And after few seconds add Onions and saute till golden brown, then add the chillies and ginger and saute. Add chilli powder if u feel u need it more hot. Now add the soaked beans and 3 cups of water, turmeric powder, coriander powder and salt and cook for 4 whistles. Then when the bean is cooked open the lid and add amchur powder and cooked rice and mix well. Check for salt , add more if needed. Garnish with cilantro. Serve hot with raita or chutney of your choice

Fried Cauliflower

Ingredients:

Cauliflower 1 cut to medium florets
Chana dal Flour( besan) 3/4 cup
Rice flour 1/4 cup
Red chilly powder 1 tsp or according to your taste
Asafoetida 1/2tsp
Cilantro leaves finely chopped 1/2 cup
Oil for frying
Salt to taste

Method:

Mix all the ingredients and add 1/4 cup of water and mix them together to a thick batter. Heat oil in a pan. Wash the cauliflower florets in warm water and dip it in the batter and deep fry until golden orange color. Serve as a snack or with a meal.
